Core to the school are our hands-on, interactive day courses. These cover a large range of subjects and cooking styles but have the same basic format. Beginning at 10 am we have two dedicated teaching sessions, each lasting approximately two hours, separated by a break for coffee and fresh muffins at about midday.
Working with a group of about ten, we prepare and cook our lunch starting quite literally from scratch. Fish is skinned and filleted, meat boned and portioned, crabs and lobsters cooked from live.
During the course of the morning we also make bread and prepare canapes to enjoy with our pre-lunch glass of fizz. This extensive range of dishes means that everyone who comes to a course has a wide choice of recipes to mix and match at home. All course recipes are given after lunch when there is time for a brief questions and answers session finishing at about 4:15pm.
