Is passionate about food and believes that cooking can and should be enjoyable. Her philosophy is that you should take beautiful ingredients, cook them simply, then sit down and share the meal with friends. A well
known journalist, Thane appears regularly on television and has written seven books the most recent of which is, Simply Good Food.

Sara Fox

Is one of the most highly acclaimed chef/proprietors in Suffolk. Her understanding of local produce is unparalleled and her knowledge of techniques encyclopaedic. Responsible for training dozens of young chefs, Sara still works hands on in the kitchen of the hugely successful Lighthouse Restaurant in Aldeburgh. Whether buying fish from the beach or fruit from local farms Sara believes in using only the finest seasonal ingredients. The Lighthouse Restaurant is recommended by the Good Food Guide, the Michelin Guide and the AA Guide.

Aldeburgh Cookery School

Is located on the east side of the High Street about fifty yards south of the cinema and nearly opposite The Lighthouse restaurant. Situated in the centre of town and only yards from the beach, the Aldeburgh Cookery School was once the town’s Police station. This lovely Victorian house has been converted to create a relaxed and professional environment. There is a state of the art kitchen with both modern and traditional equipment, a beautiful dinning room in which to enjoy the delicious meals and a small shop selling kitchen essentials, cookbooks, preserves, aprons and gift vouchers. A seminar room plus comfortable sitting room, where coffee, tea and cold drinks are always available, complete the premises.

Aldeburgh

This beautiful seaside town is one of Suffolk’s most sought after locations. The stunning local landscape, internationally acclaimed music festival, sports facilities that include two golf courses, four all weather tennis courts, sea bathing and sailing all make this a special place to visit. The High Street has a wealth of interesting shops and galleries, with antiques and high quality craft shops a real speciality.

The Aldeburgh cookery school has been created to promote and encourage the enjoyment of cooking and eating good food

We like to cook and eat only the best and freshest produce so we consciously adapt our courses to suit the seasons, buying from local suppliers and choosing organic whenever possible. Tides and weather permitting we walk to the beach and buy fish from the local fleet.

During each course we discuss the buying and preparation of prime ingredients and, using both basic and intermediate techniques, we bake bread, fillet fish, joint game and generally chop, slice and whisk our way
into a more complete understanding of not only how, but why recipes work.

All courses are taught using a wide range of domestic equipment and appliances but the aim of the school is to get you to touch, smell and taste the food using your hands as a prime tool. We want you to trust your
instincts and so relax and enjoy time spent in the kitchen.

All dishes are prepared from raw and we try all the food that we cook. Meals are eaten at a leisurely pace sitting in our beautiful dining room, enjoying wines chosen to enhance the dishes.

All equipment including knives and aprons are provided and a full set of recipes is given at the end of each course.
