Core to the school
are our hands-on, interactive day courses. These cover a large
range of subjects and cooking styles but have the same basic format.
Beginning at 10am we have two dedicated teaching sessions, each
lasting approximately two hours, separated by a break for coffee
and fresh muffins at about midday.
Working
with a group of about ten, we prepare and cook our lunch starting
quite literally from scratch. Fish is skinned and filleted, meat
boned and portioned, crabs and lobsters cooked from live. |
